in the summer season by adding the wild fruit to 

lambic and letting them get on with it. You get a 

brew that is all strawberry on the nose but 

when drunk has a sharp sour body with virtually 

no carbonation. The aftertaste though is a thing to

 behold with every breath out the strawberry flavours

 get more intense, until you take another sour swig that is.
